Curry Channa (Chick pea) and Potato






How would you like a thick rich gravy that goes well with rice, roti, or dosa.
In Trinidadian Cusine, Curry Channa is used in many dishes. From a great snack like "Doubles" which are two pieces of fried dough stuffed with a chickpea mixture. It also pairs well with my favorite dish, "Roti", a traditional West Indian Flat bread, but you can can it by itself. Its so good you won't believe its also vegan. So indulge



Ingredients

1 can cooked channa(chick peas)

2 potatoes

1 small Onion chopped

2 tbsp Cooking oil

3 cloves Of Garlic crushed

2 tbsp Curry powder

to taste Salt

1 tsp Pepper sauce

1 tsp Green seasoning

1/4 cup Cold water

1 cup boiling water

Method
1. Cut potatoes into 1 inch cubes
2. Heat oil in an iron pot
3. Add onion and garlic
4. Mix curry powder with 1/4cup cold water and add to oil and cook until think.
5. Add potato and stir till coated with the curry
6. Add 1 cup of boiling water and cook until most of the water boils down.
7. Add the can of channa and continue cooking until water has boiled down and potatoes are tender.
8. Season with salt and pepper to taste

Fruit Crepes with Banana Sauce


Enjoy a Fruit Crepe with vanilla ice cream, whipped topping and cool strawberry, warm blueberry or cinnamon apples.
A crepe is a type of very thin pancake, usually made from wheat flour. This recipe can be used as the basis for any crepe creation.
This crepe is light, delicate and rolled with savory or sweet ingredients for meal that delights any time day or night


Ingredients



6 Strawberries
1 Banana

10 Blackberriers or Cheeries

6 Crepes (Click for recipe)

Dark Chocolate Fudge

Banana Sauce (Click for recipe)


Method
1. Follow directions to making the Crepes
2. Slice the fruit 1/8 inch thick
3. Make Banana Sauce and set aside.
4. Spread a generous amount of the sauce across the crepe
5. Add 2-3 tbsp of sliced fruit
6. Roll up crepes
7. Drizzle with hot fudge

This is a wonderfully rich Southern pie recipe that is the best I've tried.



Ingredients
Pastry Dough or Store Bought Pie Shells
3/4 Stick Butter, unsalted
1/4 cup Light Brown Sugar
3/4 cup Corn Syrup
2 tsp Vanilla Extract
1/2 tsp Grated Orange Zest
1/4 tsp Salt
3 Eggs
2 cups Pecan Halves

Method
Preheat oven to 350 degrees F and place a baking sheet on the secon rack
2. Roll out dough on a lightly floured surface with a lightly floured rolling pin to a 12 inch round and fit into a 9 inch pie plate, them crimp edges decoratively
3. Lightly prick bottom all over with a fork.
4. Chill intil firm, at least 30 minutes.
5. Meanwhile, melt butter in a small heavy saucepan over medium heat
6. Add brown sugar, whisking until smooth.
7. Remove from heat and whisk in corn syrup, vanilla, orange zest and salt.
8. Lightly beat eggs in a medium bowl, then whisk in corn syrup mixture.
9. Put pecans in a pie shell and pour corn syrup mixture evenly over them.
10. Bake on a hot baking sheet until filling is set. About 50 minutes to 1 hour.
11. Cool completely

Basil Shrimp Pasta

Basil Shrimp Pasta


This takes no time to prepare. It looks like you've cooked all day. This family dinner comes together in 35 minutes. Throw a green salad together and you've done it.



Ingredients


1 box (Cooked to specifcations on the box)Linguine

1 Ib (Cleaned and Deveined) Shrimp

1 tsp chopped Garlic

1 (8oz) Package Angel Hair Pasta )

1/4 cup Olive Oil, divided

2 (28 oz) cans Italian Style diced Tomatoes, drained

1/2 cup White Wine

1/4 cup Parsely, chopped

2 tbsp Fresh Basil, chopped

3 tbsp Freshly Grated Parmesan Cheese


Method
1. Bring a large pot of water to boil and add 1 tbsp oil.
2. Cook pasta in boiling water until al dente.
3. Place pasta in a colander and give a quick rinse in cold water.
4. Heat remaining oil in a 10 inch skillet over medium heat or on a griddle. Cook garlic, stiring constantly until garlic is tender, about 1 minute.
5. Add shrimp and cook for 3-5 minutes

6. Remove shrimp and set aside.
7. Stir tomatoes, wine, parsley and basil into skillet.

8. Continue cooking, stirring occasionally, until liquid is reduced by half. 8-12 minutes.
9. Add shrimp and continue cooking until the shrimp are heated through, about 2-3 minutes.


10. Serve the shrimp mixture over the pasta. Sprinkle with parmesan cheese and chopped basil.

Green Seasoning

Green Seasoning



Say Goodbye to boring tasting food. This was a staple in my family's home and was passed down from my Grandmother , to my Mom and will be passed on to my children as well. This seasoning is a marriage of herbs and spices that are known in the West Indies.

With this blend you are not limited to the number of things you can do with it. For instance, you may add it to your meats and fish as a marinade or to a dish you are preparing just to enhance the flavor while still add lots of nutrients. So just like other parts of the world there is that special something that we all have, our secret ingredient. Just like the recipe from my Dominican friend for Sofrito that I've also shared

Ingredients


10 Cilantro Leaves

1 Onion

12 Cloves of Garlic

7 Green Onion(Scallions)

1 cup Water

2 Scotch Bonnet Peppers

1 tbsp Salt



Method
1. Blend all ingredients in a blender or food processor.

2. Store in refrigerator

Eggnog Cream Puffs

Eggnog Cream Puffs












Homemade puffs will wow your guest. They are extremely easy to prepare, especially if you fill them with instant vanilla pudding. In Trinidad we fill them with a cheese paste filling, tuna filling and even a chicken salad filling. I've included some of these filling here for you to try. 






Ingredients

Puffs
1 cup1 Water
1/2 cup Butter or Margarine
1 cup All Purpose Flour
4 Eggs




Eggnog Fluff Filling
1 package (4 serving size) vanilla instant pudding mix
1 cup Milk
1 tsp Rum Extract
1 tsp Ground Nutmeg
1/4 tsp Ground Ginger
2 cups Whipping Cream
Powered Sugar


Cheese Paste Filling
2 cups Grated Montery Jack Cheese
1/2 cup Butter or Margarine
2 tbsp Mayonnaise
2 tsp Pepper sauce
2 tbsp Mustard
1/2 cup Finely Grated Carrots (optional



Tuna Fish Filling

2 5-ounce cans Tuna
2 Pimento Peppers chopped finely
1 1/2 tbsp Lemon juice
1/4 tsp Black Pepper
1/4 cup Mayonnaise
1/4 cup Salt
1/4 tsp Hot Sauce(optional)

Method

Heat oven to 400 degrees F

In a 2 1/2 quart saucepan, heat water and butter to a rolling boil.

Stir in flour, refuce heat to low.

Stir vigorously over low heat about 1 minute or until mixture forms a ball; remove from heat


Beats eggs one at a time, and add to mixture.

Fold eggs into mixture until smooth.

On an ungreased cookie sheet, drop dough either with a spoon or pipe onto sheet, about 3 inches apart

Bake 35-40 minutes or until puffed and golden.
Cool away from draft about 30 minutes.



Prepare Filling and cut off top third of each puff and pull out any strands of soft dough.

Fill puffs with filling of choice.

Filling


Eggnog Fluff Filling

In a large bowl, beat pudding mix, milk, rum extract, nutmeg and ginger with an electric mixer on low speed until well blended.
Add whipping cream
Beat on high speed for 1-2 minutes


Cheese Paste Filling

Add cheese, grated carrots, butter, mayonnaise, pepper, mustard in a bowl.
Mix thoroughly into a smooth paster


Tuna Fish Filling
Drain and squeeze excess water from tuna. Add lemon juice, pimento pepper, onions, salt, black pepper and pepper sauce. Mix thoroughly Add mayonnaise and adjust salt and pepper if desired.

Trinidad Lo Mein

Another dish diverged from our Chinese Culture. I usually make this dish on special occasions like birthdays or large gatherings. A favorite with my friends. Pair with Trinidad Style Fried Rice and Trinidad Style Chinese Chicken

Method

Cut carrots and sweet peppers julienne style
Boil Noodles as per the directions on the packaging 
Drain and drizzle a little oil and toss to prevent from sticking together 
Heat oil 
Add carrots and sweet peppers and fry for 1-2 minutes 
Add the fry rice season
Reduce heat to medium and add noodles and soy sauce
Using a fork, toss together. let fry on a low heat for 2-3 minutes and fry for additional 2 minutes

Lasagna



Who says meat and vegetables can't co-exist. Lasagna-The word refers to a dish made with several layers of Lasagne sheets alternated with sauce and various other ingredients. A traditional dish from Italy. There is no greater good in the world than a saucy pile of cheese and noodles. Everyone loves it, and what a great dish to take to your next pot luck. 

Ingredients 
2 tbsp green seasoning 
16 pieces (16oz) Lasagna uncooked 
1 lb Ground Beef 
3 cups (26oz) Pasta Sauce 
4 cups (32oz) Ricotta Cheese 
2 cups (8oz) Mozzarella Cheese 
2 tbsp Parmesan Cheese, grated 
1 pk (10oz) chopped Spinach 
1 Large Egg 


Method

Heat oven to 350 degrees F
Cook pasta according to the directions on the packaging
Add green seasoning to the ground beef
Brown ground beef in skillet and drain off excess oil
Add pasta sauce and let simmer for 5 minutes
In a bowl combine ricotta cheese , egg and spinach and set aside
In a 13 X 9 inch baking dish, spread 1/2 cup meat sauce
Place 4 pasta pieces lengthwise over sauce, over lapping edges. Spread 1/3 ricotta cheese mixture and mozzarella cheese over pasta. cover with 1/4 of sauce. Repeat layers twice
Spread remaining sauce on top
Sprinkle with parmesan cheese and mozzarella cheese, cover with foil, bake for 30 minutes or until hot and bubbly.
Let stand for 5 minutes before serving
Makes 8 to 10 servings

Cheesecake Brownie

Cheesecake Brownie


Cheesecake and Chocolate, whats not to love? Why compromise? Have your (cheese) cake and brownie in a single dessert. This started for me because I was asked at an event if I wanted Brownies or Cheesecake, but my delimma was i wanted both. So I decided to marry the two, and this was the result. Heaven in every bite.


Ingredients

Cheesecake
4 boxes of cream cheese
1 cup sugar
1 tsp vanilla essence
4 eggs
Dark fudge (garnish)
Fresh Blueberries and Raspberries (garnish)

Brownie portion
Dunkin Hines (milk chocolate brownie mix)
3 eggs
1/4 cup water
1/2 cup vegetable oil


Method

Empty brownie mix, eggs, water and oil in a large bowl

Stir until blended. spread into greased springform pan

Bake for about 10 minutes or until firmed up at 350 degrees F

Remove from oven

Set creamcheese out and let thaw for easy mixing

Add creamcheese to a large bowl

Cream with sugar until smoothe and fluffy

Add essence and eggs one at a time.

Add mixture to brwonie crust and return to oven.

Bake for 55 minutes at 325 degrees F

Garnish

Heat about 1 tlsp of dark fudge in microwave for 30-45 seconds

Drizzle chocolate over the top of the cake

Buffalo Wings

Buffalo Wings


Ingredients



3lb Chicken wings cut up into two parts (tips removed)
1 cup of all purpose flour
2 tbsp green seasoning
1 tsp salt
Vegetable oil for frying


Medium Heat Sauce


1 cup cayenne pepper sauce
1/2 tsp cayenne pepper
1/2 tsp garlic powder
1/8 tsp ground black pepper
1/2 tsp Worcestershire sauce

1 tsp granulated sugar


Blazzin Heat Sauce


1 cup cayenne pepper sauce
1 1/2 tsp cayenne pepper
1/2 tsp garlic powder
1/8 tsp ground black pepper
2 tsp water
2 tsp corn starch
1/2 tsp Worcestershire sauce


Honey BBQ Sauce


1 cup ketchup
1/3 cup white vinegar
1/4 cup molasses
1/4 cup honey
1 tsp liquid smoke
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp paprika
1/4 tsp chilli powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp cayenne pepper

Method

In a bowl combine chicken, green seasoning and salt in a bowl an allow to marinate for 1 hr.

Heat oil to 350 degrees F

Remove wings from the marinade and dip in flour before frying.

Fry wings 10 to 12 at a time until light brown

Remove from heat and drain on a rack or paper towels

Place in a plastic bowl with lid.

Add 1/4 to 1/3 cups of our favorite sauce.

Cover and shake to coat wing

Add wings to your serving plate with celery and blue cheese dressing for dipping.

Sauces
Combine all ingredients in a blender. Simmer in a saucepan for 20-30 minutes.

Apple Pie Smoothie



Want a slice of Apple pie? Have this drink instead. Yes its healthier but it takes great. You might surprise yourself.

Ingredients

1 cup almond milk
1/2 of banana
1/2 granny smith apple
1/4 tsp cinnamon
pinch of nutmeg
1 tsp honey(optional)
1 handful of ice


Method

Wash all produce.

Cut banana and apple into small peices

Add all ingredients to a blender

Blend on high for 45 to 60 seconds on high or until smooth.
