Curry Channa (Chick pea) and Potato






How would you like a thick rich gravy that goes well with rice, roti, or dosa.
In Trinidadian Cusine, Curry Channa is used in many dishes. From a great snack like "Doubles" which are two pieces of fried dough stuffed with a chickpea mixture. It also pairs well with my favorite dish, "Roti", a traditional West Indian Flat bread, but you can can it by itself. Its so good you won't believe its also vegan. So indulge



Ingredients

1 can cooked channa(chick peas)

2 potatoes

1 small Onion chopped

2 tbsp Cooking oil

3 cloves Of Garlic crushed

2 tbsp Curry powder

to taste Salt

1 tsp Pepper sauce

1 tsp Green seasoning

1/4 cup Cold water

1 cup boiling water

Method
1. Cut potatoes into 1 inch cubes
2. Heat oil in an iron pot
3. Add onion and garlic
4. Mix curry powder with 1/4cup cold water and add to oil and cook until think.
5. Add potato and stir till coated with the curry
6. Add 1 cup of boiling water and cook until most of the water boils down.
7. Add the can of channa and continue cooking until water has boiled down and potatoes are tender.
8. Season with salt and pepper to taste
